Gluten-Free Pancake Mix

An easy option for busy mornings, a gluten-free pancake mix can be a great way to create this delicious breakfast treat.  

Depending on which mix you use, you may need different ingredients. 

The most common ingredients for gluten-free pancake mixes are: 

  • Oil 
  • Butter (unsalted) 
  • Milk  
  • Water 
  • Eggs 
     

Oftentimes, the sugar, salt, and/or baking powder is already in the mix, and you will not need to add these ingredients.  

How to Prepare?

To prepare the mixes, we recommend using this method: 
 

  1. Gently preheat your griddle or pan on medium heat, and lubricate the surface with a thin layer of butter to prevent sticking.  

  1. Pour mix into a bowl with any other dry ingredients. 

  1. Mix the wet ingredients in a separate bowl.  

  1. Create a hole in the center of the dry ingredients, then pour the wet mixture into the center and combine. Mix the wet and dry ingredients until smooth, but do not overmix, as this can result in gluey or rubbery pancakes. 

  1. Drop the desired amount of the mixture onto the cooking surface once it is prepared and the surface is hot. Add mix ins once the batter is on the cooktop.  

  1. Cook on one side until bubbles form and then pop, then flip the pancake. Adjust temperature and lubricate with addtional butter as needed. 

Can I Make These Pancakes Dairy-Free? 

To make your pancakes dairy-free, first ensure that the pancake mix does not already contain gluten. If the recipe requests milk to be added, you can substitute this for a milk alternative, or water.  
 
If the recipe calls for butter to be added, you can use a butter alternative, such as margarine, or use oil.  

Can I Make These Pancakes Vegan? 

After following the steps above to make sure the mixture is dairy-free, if it calls for eggs to be added, you can substitute this for egg replacer, banana, tofu, apple sauce, or soy yogurt. 

Fluffy Gluten-Free Pancakes

Scrumptious and soft, fluffy pancakes are a delicious way to start the morning, and have an extra flair to them due to their light, airy texture. The following recipe is sure to make about 8 servings of delicious fluffy pancakes.  

In the mixture is baking powder, and its purpose is to airate the mixture while cooking to create a fluffy pancake through chemical reactions. However, adding too much baking powder may result in a slightly metallic, tainted flavor.  

One of the easiest ways to create fluffier pancakes without the use of baking powder is to whisk egg whites separately, so they form stiff peaks, then gently fold them into the rest of the batter.  

When combining the rest of the mixture with the whisked egg whites, be sure to combine them gently so the air is not knocked out of the eggs, which would result in a less fluffy pancake.  

If you decide to whisk your eggs, you can add less baking powder or just remove it from the recipe altogether.  

How to prepare?

For these beautiful fluffy pancakes you will need the following ingredients:  
 

  • 1 ½ cups gluten-free flour 
  • 2 teaspoons of baking powder 
  • 1 teaspoon salt 
  • 1 tablespoon white sugar 
  • 1 ¼ cups milk 
  • 1 egg 
  • 3 tablespoons unsalted butter, melted 

  1. Gently preheat your griddle or pan on medium heat, and lubricate the surface with a thin layer of butter to prevent sticking.  

  1. Sift the flour into a large bowl along with the other dry ingredients (salt, baking powder, sugar), and mix them together.  

  1. Mix the wet ingredients in a separate bowl until combined. If you have decided to whisk your egg whites, keep them in an additional separate bowl.  

  1. Make a pit in the center of the dry ingredients, then put the wet mixture into the center and combine it. Without overmixing, join the wet and dry ingredients.  

  1. If you have decided to whisk your egg whites, gently fold them in after the dry and wet mixtures have been combined. 

  1. Dollop the desired amount of the mixture onto the cooking surface once it is prepared and the surface is hot. Add mix-ins once the batter is on the cooktop.  

  1. Cook on one side until bubbles form and then pop, then flip the pancake. Adjust temperature and grease with more butter if needed. 

Can I Make These Pancakes Dairy-Free? 
 

To make this a gluten-free dairy-free pancake recipe, simply substitute the milk for a dairy-free alternative, such as almond milk, which tends to work well in this recipe.  

For the butter, you can use dairy-free margarine instead.  

Can I Make These Pancakes Vegan? 
 

The first step to make these vegan gluten-free pancakes is to follow the steps above to make the mixture dairy-free by using milk and butter alternatives.  
 
To make the pancakes vegan, there is a trick with chickpea water that works quite well to mimic egg whites, called aquafaba.  
 
Aquafaba is the remaining juice that chickpeas are cooked in and is most easily found in canned chickpeas. Simply whisk the aquafaba like you would egg whites, and gently fold in.  
 
This creates a texture similar to whisked egg whites and presents very little addition of extra flavor to create fantastic vegan gluten-free pancakes and other baked items.  

Gluten-Free Pumpkin Pancakes 

Pumpkin Gluten-Free Pancakes

Unique in flavor and perfect for chilly fall mornings, pumpkin pancakes with warming spices are perfect to mix up your usual pancake recipe. 

This recipe should yield about 8 pancakes.  

How to prepare?

Ingredients list:  

  • 1 cup pumpkin puree 
  • 1 cup of gluten-free flour, we recommend oat flour 
  • ¼ cup milk 
  • 2 tablespoons butter 
  • 2 eggs 
  • 1 tablespoon lemon juice 
  • 1 teaspoon maple syrup or honey 
  • 1 teaspoon vanilla extract 
  • ½ teaspoon baking soda 
  • ½ teaspoon salt 
  • ½ teaspoon ground cinnamon 
  • ½ teaspoon ground ginger  
  • ½ teaspoon ground nutmeg 
  • ½ teaspoon ground clove 

While this may seem like a lot of additional elements to create a pancake, the warming spices pair well with the pumpkin to create a pumpkin pie flavor.

The baking soda and lemon are the raising agent in the pancake, creating a lighter texture.  

  1. Gently preheat your griddle or pan on medium heat and lubricate the surface with a thin layer of butter to prevent sticking. 

  1. In a medium bowl, combine the dry ingredients (flour, salt, baking soda, spices). 

  1. In a separate bowl, combine the wet ingredients (pumpkin puree, milk, butter, eggs, honey/maple syrup, vanilla extract, lemon juice). 

  1. Create a well in the center of the dry ingredients, then add the wet mixture into the center and combine it. Mix the wet and dry ingredients until smooth.  

  1. Dollop the desired amount of the mixture onto the cooking surface once it is prepared and the surface is hot. Add mix-ins once the batter is on the cooktop.  

  1. Cook on one side until bubbles form and then pop, then flip the pancake. It may be more difficult to see the bubbles due to the thickness of the mixture. Adjust temperature and lubricate with additional butter as needed. 

Can I Make These Pancakes DairyFree? 

To make dairy-free, substitute the butter for margarine or coconut oil, and use dairy-free milk.  
 
Almond, coconut, soy or oatmilk should work perfectly as replacements for normal milk. 

Can I Make These Pancakes Vegan? 
 

After following the steps above to make sure the mixture is dairy-free, if it calls for eggs to be added, you can substitute this for egg replacer, banana, tofu, applesauce, or soy yogurt.  
 
Furthermore, you can use maple syrup instead of honey. 

Gluten-Free Potato Pancakes (Latkes) 

Latkes were long considered a “peasant food” originating hundreds of years ago, but recently, they have gained great popuarity for their crispy, savory bite. They are prepared to celebrate Hanukkah by the Ashkenazic Jews. 

They are also very popular in Europe, especially in the Baltic and Scandinavian countries. 

How to prepare?

 
This recipe makes about 6 servings of gluten-free potato latkes.  

Ingredient list:  

  • 4 russet potatoes or 2 ½ pounds of russet potato 
  • 1 small white, sweet, or yellow onion  
  • 3 large eggs 
  • 1/3 cup rice flour (or sweet rice flour)  
  • 1 teaspoon salt 
  • 1 teaspoon black pepper 
  • Neutral oil (for frying)  

  1. Preheat your pan with about 1/8 of an inch oil coating the bottom.  

  1. Peel and grate the potatoes and the onion, then strain as much water out of the mixture as possible. Excess moisture can dampen the crisps on latkes. Dry multiple times if needed. Once dry, put the potato and onion mixture in a bowl. 

  1. Whisk the eggs (optional) and add them to the potatoes, making sure to coat them in egg.  

  1. Mix together the rice flour, salt, and pepper, then add to the bowl. Use a fork (or your hands) to make sure the potato mixture is fully coated in flour.  

  1. Make sure your pan is hot. If the oil is too cold, it will absorb into the latkes and create an oily and soggy texture.  

  1. Shape the latkes losely into a disk, then fry, making sure to not overcrowd the pan. Flip only once, as the latkes can break apart if moved around too much.  

  1. After they are golden brown, or crispy to your liking, remove the latkes and place them on a paper towel lined sheet, or a wire rack to allow excess oil to not absorb back into the latkes.  

Can I Make These Pancakes Dairy-Free? 

Luckily, this latke recipe is naturally gluten-free, so no worries!  

Can I Make These Pancakes Vegan? 

To make these gluten-free egg-free pancakes, you will need to find another binding agent for the latkes.  

We recommend using an egg replacer that gives it the closest consistency to eggs.
